Sip Happens: Your May Smoothie Line-Up

Throughout the month of May we’re bringing you some amazing smoothie recipes to blend and sip. And to start you off we’ve got this incredible sweet potato offering… don’t knock it until you’ve tried it!

Sweetpotato Smoothie with Pineapple and Coconut Water

Crafted by the North Carolina Sweetpotato Commission, this Sweetpotato Smoothie with Pineapple and Coconut Water is a naturally sweet, refreshing blend that balances tropical, summer flavours with hearty nourishment.

Ingredients (serves 4 x 200ml smoothies)

300g sweetpotatoes

500g pineapple

2 organic oranges

1 lemon

300ml coconut water

Directions

Step 1

Preheat the oven to 180°C. Wrap the sweetpotatoes in aluminium foil and bake for 60 to 80 minutes until soft. Remove from the oven and scoop out the pulp with a spoon, discarding the skin.

Step 2

While the sweetpotatoes bake, peel the pineapple and cut it into small dice.

Step 3

Wash the oranges in hot water, dry, and grate the zest. Squeeze the juice from the oranges and the lemon.

Step 4

In a blender, combine the sweetpotato pulp, diced pineapple, orange zest, orange juice, lemon juice and coconut water. Blend until smooth.

Step 5

Taste and adjust with extra lemon juice if desired.

Step 6

Pour into glasses and serve chilled.
